Appetizers:

Cheese Stuffed Mushrooms:  Button mushrooms stuffed with mozzarella cheese, cooked in Chardonnay.

Cajun Angels:  Jumbo shrimp wrapped in bacon, then blackened to perfection and served with a reumalaude sauce.

Oysters Italiano:  Large oysters on the half shell topped with a crabmeat mixture and baked.

Baked Brie:  A wedge of Brie cheese stuffed with blue cheese and apricot preserves wrapped in puff pastry and baked to a golden brown.

Entrees:

Stuffed Chicken Breast:  Chicken Breast stuffed with italian sausage, sauteed and topped with Marsala sauce.

Beef Burgundy:  Roast Beef slow cooked in red wine, rosemary and carrots served over pasta.

Pork Boursin:  Breaded pork tenderloin sauteed with herbs and spices to seal in the flavor, then baked and topped with Boursin cheese sauce.

Crabmeat Au Gratin:  Lump crab meat in creamy cheese sauce.

Tequila Fish:  Fish of your choice (we recommend snapper, grouper, or something similar), marinated in a tequila mixture, grilled, then topped with a black bean salsa and crushed tortilla chips.

Grilled Tuna with Crab meat:  A Lemon Pepper coated tuna steak grilled and topped with crab meat and a creamy lemon sauce.

Fried Fish Lagniappe:  Lightly fried fish filets topped with marinated crab, shrimp and craw fish then topped with a meuniere sauce.

Desserts:

Hummingbird Cake:  Chunks of pineapple, banana, cinnamon and pecans fill three layers of cake, then iced with cream cheese frosting.

Devil's Food Cake:  Chocolate on chocolate on chocolate made from scratch. This is our son Cameron's favorite birthday cake.
